Muscadine Wine

Muscadine WineCan someone give me a good recipe muscadine?

Me will make muscadine wine home in a few weeks. I made several years ago with the sugar and yeast, but I wanted to see if someone had a very good recipe.

Wine grape, muscadine Scuppernong OR

8 qt. fruit
8 lbs. sugar
4 qt. hot water
1 pkg. dry yeast

Dissolve yeast in sugar water. Pour the pureed fruit. Stir. Cut a potato and put on top then add a good handful of flour on top of it. Let stand for 28 days. Combine all day. Strain and bottle, but are not watertight. This recipe is a fire of course, do not fail.

Muscadine BERNARD VICTOR'S
Section of the kitchen, August 2003

Ingredients needed:

In a bottle to one gallon:
1 quart grape juice
1 tsp tablespoon yeast, dissolved in hot water
1 to 2 cups of sugar to taste. (More sugar sweet wines, dry vintage least
3 tablespoons of sodium carbonate (buy this in a pharmacy)

Wash the grapes and squeeze the juice with your hands. (This is the Cajun way of winemaking, Bernard, who lives in New Iberia, said.)
Fill the bottle the rest of the height and stir. Drill a hole through a cork, and put a hole through the length of transparent tube. Cork one end of the tube in the bottle of wine and put the other in a container of water. Make sure the hose remains in the water, so carbon dioxide can escape without air entering the cylinder and damage the wine. Allow to rest somewhere cool for 14 days. That's all it takes, according to Mr. Bernard, to make wine.
