The region of Chablis is the northernmost district of Burgundy wine region in France. The vineyards around the town of Chablis are almost all Chardonnay, a dry white wine renowned for the purity of its aroma and taste.
Style
The location of the North (48) means that the Chablis wines have more acidity and fruity aromas less than Chardonnay wines grown in warmer climates, but their style and pure mineral has a great elegance. They often have flint, "notes, sometimes described as" go? T Peter Gun "(flint) and sometimes as" steel ".
Compared with white wines from the rest of Burgundy, Chablis is on average much less influence of oak. Many completely unoaked Chablis, and vinified in steel tanks. The amount of barrel maturation, if any, is a stylistic choice that varies greatly between producers of Chablis. Many of Grand Cru and Premier Cru wines receive matured in oak barrels, but generally the time in the barrel and the proportion of new oak is much lower than for whites from the C? Te de Beaune.

History
The history of Chablis and its vineyards are cycles of slow recovery after the setbacks of violence, both human and wine.
It is probable that the grapevine has come to the region with the Romans, if not before. As elsewhere, the Dark Ages saw monasteries put much effort into the vineyards for the wine of communion, and close to Auxerre in the market meant that Paris was easily accessible.
There are records in the mid 15th century the wines of Chablis are shipped to England, Flanders and Picardy. But in February 1568, the city was razed by the Huguenots, and in the region did not really recover until the 18th century. Then came the ravages of the Revolution, the little ice age and the invasions of Prussia. As the vines have been built back, they were hit first by mildew in 1880, then by phylloxera.
Again recovered the region, producing more than 160,000 cases annually in the 1930s, but it took a heavy toll in the Second World War, and only 5000 cases were produced in 1945. Output rebounded to more than 100,000 cases in 1949, but the vineyards were devastated by the late frosts of 1957 and 1961. Many have not been replanted.
Geography
Chablis is located about 100 miles (160km) north of Beaune, located halfway between the center of Burgundy, C? Te d'Or and Paris. It is closer to Champagne for the rest of Burgundy. The growing areas of France, Champagne does not benefit from a location further north. The region covers 15 km x 20 km across 27 towns and across the river Serein.
